The term "osso buco" translates to "bone with a hole," referring to the marrow-filled bone in the center of the shank.

Osso Buco is an Italian dish made with shanks containing marrowbone, stewed in wine with vegetables and seasonings. The dish is known for its tender meat and rich, flavorful sauce, often served with a gremolata (a mixture of parsley, garlic, and lemon zest). 
Our cross-cut shanks are from an animal aged to 24-30 months.  These shanks are best cooked low and slow and will give you tender, flavorful dishes!  May also be used in soups and make incredible nutrient dense bone broth.

It's best to thaw a cut of beef in the refrigerator, or in the sink in COLD water. Remember to allow steaks to come to room temperature before cooking.

You should let a steak sit for 5 minutes after cooking before slicing it. If it's a thinker cut, allow 10 minutes before slicing. (Rule of thumb is 5 min per inch of thickness.)
